Kashmiri chicken karyari is a delicious Kashmiri chicken curry that is made with fragrant spices and yogurt. Here's a recipe to make it:
Ingredients:
- 1 kg chicken, cut into pieces
- 2 cups yogurt
- 2 tbsp ghee
- 2 tbsp oil
- 2 onions, chopped
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 2 tbsp coriander powder
- 1 tbsp cumin powder
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp fennel powder
- 1 tsp cardamom powder
- 1 tsp cinnamon powder
- 1 tsp cloves powder
- Salt to taste
- Chopped cilantro for garnish
Instructions:
- To begin, take a large mixing bowl and whisk the yogurt until it's smooth. Add the chicken pieces and coat them thoroughly with the yogurt. Set the bowl aside and let the chicken marinate for at least 30 minutes.
- Next, heat up some ghee and oil in a large pot over medium heat. Once the pot is hot enough, add the onions and sauté them until they turn golden brown.
- Then, add the ginger paste and garlic paste to the pot and sauté for about a minute. Add the coriander powder, cumin powder, red chili powder, turmeric powder, fennel powder, cardamom powder, cinnamon powder, cloves powder, and salt to taste. Mix everything together well and let it cook for another minute.
- Now, add the marinated chicken to the pot and stir it well to make sure the spices coat the chicken evenly. Cover the pot and let the chicken cook over low heat for 30-40 minutes, stirring occasionally until it's fully cooked.
- Once the chicken is done, sprinkle some chopped cilantro on top for garnish. Serve it hot with either rice or bread.
Enjoy your delicious Kashmiri chicken karyari!
